HAKO LLUKANIK WITH ROASTED VEGETABLES

Ingredients:

4 Hako Llukanik sausage, cut into thick slices

1 red bell pepper, chopped

1 yellow bell pepper, chopped

1 zucchini, chopped

1 large red onion, chopped

1 cup of cherry tomatoes

2 tablespoons of olive oil

1 teaspoon of oregano

½ lugë çaji trumzë

Salt and pepper to taste

Juice of 1 lemon

Arugula leaves for serving

Përgatisni Llukanikun Hako:

Cut the Hako Llukanik sausage into thick slices. 

Skuqini Llukanikun:

Heat a pan over medium heat and fry the sausages slices until they turn golden brown. Remove them and set aside. 

Prepare the vegetables:

In a baking dish, combine the bell peppers, zucchini, red onion, and cherry tomatoes. Add olive oil, oregano, thyme, salt, and pepper. Mix well. 

Roast the vegetables:

Preheat the oven to 200°C (400°F) and roast the vegetables for about 20 minutes until they soften and turn golden.

Shtoni Llukanikun:

Add the sausage slices to the tray, mix them with the vegetables, and let them roast for another 10 minutes.

Final steps and serving:

Drizzle fresh lemon juice on top and serve over a bed of fresh arugula. Enjoy this delicious and flavorful dish!
