Ingredients:

  • 4 Hako sausages, cut into thick slices
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 zucchini, chopped
  • 1 large red onion, chopped
  • 1 cup of cherry tomatoes
  • 2 tablespoons of olive oil
  • 1 teaspoon of oregano
  • 1/2 teaspoon of thyme
  • Salt and pepper to taste
  • Juice of 1 lemon
  • Arugula leaves for serving

Prepare the sausages:

Cut the Hako sausages into thick slices. 

Fry the sausages: 

Heat a pan over medium heat and fry the sausages until they turn golden brown. Remove them and set aside. 

Prepare the vegetables:

In a baking dish, combine the bell peppers, zucchini, red onion, and cherry tomatoes. Add olive oil, oregano, thyme, salt, and pepper. Mix well. 

Roast the vegetables:

Preheat the oven to 200°C (400°F) and roast the vegetables for about 20 minutes until they soften and turn golden.

Add the sausages:

Add the sausage slices to the tray, mix them with the vegetables, and let them roast for another 10 minutes. 

Final steps and serving:

Drizzle fresh lemon juice on top and serve over a bed of fresh arugula. Enjoy this delicious and flavorful dish!
